Green Goodness, "Cilantro-mint-coconut chutney":

This chutney is so simple, no cooking required, and full of fresh flavors, you don't want to miss making this one! Once you have the ingredients ready, it's ready in minutes! This jazzes up meals instantly and comes in very handy as a healthy side!


It’s made with fresh cilantro, fresh mint, lime juice, sesame seeds, roasted peanuts, and unsweetened shredded coconut. The best part is it freezes very well! Every time I make this, two small bottles always go in my freezer, for another time! If I am doing all this effort, why not?


Coconut and sesame seeds provides medium chain fatty acids (MCTs) which are more easily digested by the body than long chain fatty acids. These are also rich in fiber, vitamins C, E, B vitamins, minerals like iron, selenium, sodium, calcium, magnesium and phosphorous.

Prep time: 15 minutes

Cook time: none

Serves: 4-6


Ingredients:

  • fresh cilantro, 3 small bunches or 2 large

  • fresh mint, 1 bunch

  • roasted peanuts, 1/3 cup

  • unsweetened shredded coconut, 1/3 cup

  • sesame seeds, 1/3 cup

  • lime juice from 2 large limes

  • serrano peppers or jalapenos, as needed, 1 or 2

  • salt, to taste


Instructions:

  • just wash the herbs twice, removing any dirt. Use the clean stems of cilantro leaves as they are rich in flavors. You might have to discard stems of mint leaves unless they are tender.

  • blend everything together, use up to 1/4 cup water. Use a tampering stick if your blender comes with one. Blend for 40-50 seconds and that's it!

  • freeze some if you'd like for later use! Lime juice acts as a preservative (thaw it in the refrigerator overnight or on the countertop for an hour or so).






Pro-tips:

  • Washing herbs is always tricky. Place the herbs into a deep bowl of cold water, or into a clean, water-filled sink. Herbs will float clear on the top and the dirt will settle on the bottom. Repeat this process once more. You could use a salad spinner, alternatively.
